酸菜鱿鱼螺蛳肉

  特点:鱿鱼细嫩,螺蛳缠绵,酸甜鲜香,佐酒下饭。

  炒螺蛳肉火候很难控制,容易炒老。所以先滚水里飞一下。

  小鱿鱼切粗丝,螺蛳肉剔除泥肠,也切粗丝。沸水下双丝,再开后捞出。冷水快速冲

  凉待用。

  起油锅,花椒数粒爆香。依次入盐、蒜片,略炒,加入酸菜、彩椒切丝,略炒,加入

  双丝,LEEK切丝,加锅盖略焖,撒一点鸡粉起锅。
