用料:五花肉,黄酒,老抽酱油,普通酱油,冰糖,葱,姜,蒜,八角,花椒,干辣椒,竹签

1,将五花肉切成2-3cm见方的肉块

2,把肉块放入沸腾的水中,等水再开后1-2分钟关火,用清水冲洗干净

3,炖:将调料放入砂锅底层,再用竹签铺平在上,这是为了不损伤肉皮

4,把肉块肉皮朝下摆好

5,放入黄酒,老抽,普通酱油,少许水,汤汁到肉的2/3处即可,大火,锅开后转小火,炖2小时

6,蒸:将肉块肉皮朝上摆入小瓦罐中,将砂锅里的肉汁过滤后倒入瓦罐里,盖上瓦罐的盖,大火蒸30分钟
